Pumpkin Protein Cheesecake

The holiday’s are right around the corner. With the holiday season comes loads of sweets and higher calorie foods. On the actual holiday we should feel free to enjoy all of our favorite holiday foods. But on all the days in between filled with extra holiday dinners, parties and get togethers you should still be mindful.  These days should not be a free for all, but balanced.  For this reason we are sharing a healthy version of a holiday favorite… Pumpkin Cheesecake!  Except it has extra protein and is low fat and low calorie. 


Ingredients

  • 2 scoops Vanilla Protein Protein
  • ½ Cup Sweetener
  • 1 ½ Teaspoons Pumpkin Pie Spice
  • 1 Teaspoon Ground Cinnamon
  • 2 Large Whole Eggs
  • 1 Teaspoon Vanilla Extract
  • ½ Teaspoon Salt
  • 12 Ounces Greek Yogurt Fat Free Vanilla
  • 16 Ounces Cream Cheese Fat Free
  • 15 Ounces Pumpkin Puree

Instructions

  1. Pre heat over to 325F/162C
  2. Combine all of your ingredients into a bowl
  3. Using a hand mixer mix together well.
  4. Take out at least a 9’’ cake pan, line it with parchment paper, and pour your mix in
  5. Bake for 30-35 minutes
  6. Reduce your heat to 200F/93C and continue baking for another 50-60 minutes
  7. Remove it, let it cool, wrap it up, and put it in the fridge for a few hours to cool
