Want a savory egg breakfast but do not have the time to make an egg sandwich every morning?


Well we have the PERFECT, Egg White Frittata recipe that you can make ahead of time!


It is high protein, low calorie, low fat and packed with veggies which are hard to include at breakfast!


You can warm it up as is and run out the door!  Or you have OPTIONS!  If you have 2 minutes in the morning and room in your macros, you can warm it up with cheese and a wrap or toast bread to make a frittata  sandwich!


This is what you need to give it a try!


Ingredients

Cooking Spray

1 500mL carton of Egg Whites

1 cup Cherry Tomatoes, sliced in half OR 1 red bell pepper diced

1 cup baby spinach, chopped

Salt & Pepper


Instructions

  1. Preheat oven to 400 F.
  2. Grease a large shallow baking dish with cooking spray.
  3. In a large bowl mix together the egg whites, veggies, salt and pepper.
  4. Pour into baking dish and bake for 30-35 minutes.  The egg whites should be firm.
  5. Slice into 4-5 pieces.
  6. Store in an airtight container and warm up in the microwave for 1-2 minutes.

And that’s it! You have breakfast ready for the week!


Nutrition per piece if divided into 4 pieces: 112 calories, 23 grams protein, 5 grams carbohydrates, 0 grams fat


Remember you can always add cheese, avocado, or bacon to add fat or eat it on bread if you need to add carbs!
