Healthy Super Bowl Buffalo Cauliflower Bites

Super Bowl 2022 is in just under 2 weeks!  Here you have been working hard on your new years resolution, and here comes a day filled with high calorie dips, fried foods, drinks, and even sweets!  Instead of caving into the pit falls of super bowl food, start to create a menu of healthy options!  Here is just one appetizer to swap out for those high calorie fried wings... Buffalo Baked Cauliflower Bites! 

 

Ingredients

  • 1/2 cup brown rice flour
  • 1/2 cup hot sauce (such as RedHot Original sauce)
  • 1/2 cup water
  • 3 cups cauliflower florets, cut into 1.5 inch pieces
  • Cooking spray

Directions

  1.  Preheat the oven to 450°F. 
  2. Line a baking sheet with parchment paper and spray with cooking spray
  3. To make the batter for the cauliflower, in a medium bowl, stir together the flour, 1/4 cup of the hot sauce, and the water. Dip the cauliflower pieces into the batter and place them on the prepared baking sheet as you go.
  4.  Bake for 15 minutes, remove from the oven, flip, brush with the remaining 1/4 cup of hot sauce. Then bake for 10 minutes more.
  5. You can also make these in the air-fryer!

TIP:

Serve these buffalo bites with a quick blue cheese dip and veggies. Here's how: Stir together 1/2 cup plain 2% Greek yogurt and 3 tablespoons crumbled blue cheese. Serve with carrot and celery sticks.
