Zucchini Chips


This recipe makes 1 serving



 1 lbs. zucchini – thin sliced

¼ tsp. salt

¼ tsp. pepper

½ tsp. olive oil

1 tsp. apple cider vinegar


Method of Preparation:


  1. Pre heat the oven to 350 degrees
  2. Using a mandolin slice the zucchini into thin slices *if you do not have a mandolin use a sharp knife
  3. In a bowl whisk together the salt pepper olive oil and vinegar
  4. Add in the zucchini and toss until well coated
  5. Arrange the slices on a lined baking tray and place in the oven for 20 minutes
  6. Remove and turn over and place back into oven for an additional 10 minutes – or until crisp
