Turkey Cucumber rolls

 This cool, refreshing and light snack is the perfect option for a quick and tasty treat anytime of the year!

This recipe makes 2 rolls

Ingredients:

 

8 strips of cucumber

6 slices of turkey meat – unprocessed less sodium

6 slices of tomato

½ cup shredded carrots

¼ cup shredded cabbage

3 tbsp. rice wine vinegar

1 tbsp. sugar

pinch salt and pepper

 

Method of Preparation:

 

  1. In a medium bowl mix together the vinegar sugar and salt. Add the carrots and cabbage mix well until fully coated. Leave aside to pickle
  2. Using a peeler – peel the cucumbers resulting in thin wide strips.
  3. To make 1 roll: place 4 strips overlapping on a flat surface. Then place down the 3 slices of turkey followed by the 2 slices of tomato and vegetables
  4. Fold over the edge facing you and then with a little force start to roll the cucumber – using your index finger to make sure everything stays in place
  5. Using a sharp knife cut the roll into 6 equal pieces – use toothpicks to hold them in place
