Flat Bread Pizza
This recipe makes 3 servings
Ingredients:
- 1 large pita
- 4 oz. goat cheese – crumbled
- 1 cup red onion – sliced
- 1 cup spinach
- 4 oz. balsamic vinegar
- 2 tbsp. olive oil
- 1 garlic clove
- 1 tbsp. black pepper
Method of Preparation:
- 1. Spread the olive oil over the pita bread. Cut the garlic clove in half and rub over the pita bread, place in the oven at 200 degrees for 2 -3 minutes until it starts to turn golden brown around the edges. Remove and place on a baking sheet.
- 2. In a small sauce pan, sauté the onions until soft and caramelized. This will take 5 – 10 minutes. When the onions are almost done toss in the spinach and cook until the spinach starts to cook down. Turn the oven up to 425 degrees.
- 3. Spread the onion and spinach evenly over the pita bread. Crumb over the goat cheese. Place back into the oven for 6 – 8 minutes until the cheese starts to melt.
- 4. Remove and garnish with a drizzle of balsamic vinegar and fresh cracked pepper. Cut into 3 equal slices and serve.
