Flat Bread Pizza 

This recipe makes 3 servings 

Ingredients

  • 1 large pita 
  • 4 oz. goat cheese – crumbled 
  • 1 cup red onion – sliced 
  • 1 cup spinach 
  • 4 oz. balsamic vinegar 
  • 2 tbsp. olive oil 
  • 1 garlic clove 
  • 1 tbsp. black pepper 

Method of Preparation

  1. 1. Spread the olive oil over the pita bread. Cut the garlic clove in half and rub over the pita bread, place in the oven at 200 degrees for 2 -3 minutes until it starts to turn golden brown around the edges. Remove and place on a baking sheet.
  2. 2. In a small sauce pan, sauté the onions until soft and caramelized. This will take 5 – 10 minutes. When the onions are almost done toss in the spinach and cook until the spinach starts to cook down. Turn the oven up to 425 degrees. 
  3. 3. Spread the onion and spinach evenly over the pita bread. Crumb over the goat cheese. Place back into the oven for 6 – 8 minutes until the cheese starts to melt. 
  4. 4. Remove and garnish with a drizzle of balsamic vinegar and fresh cracked pepper. Cut into 3 equal slices and serve.
